Each food item has its story. A restaurant is where that story is retold on a plate.Delivered to us daily, are vegetables and meat grown in complete harmony with nature. The wine we serve is bio-wine that has an earthy fragrance. These foods are all grown with care by farmers whose names and faces we know.How the food is prepared is important in preserving their wholesome taste. We have chosen to use wood and charcoal for our grills. Also, we cook our meat in blocks instead of in slices. That way, the flavorful juices are preserved, making for a tasteful dish.These considerations are necessary to enjoy the fine foods (and the stories they tell) at the peak of its taste."Our future lies in the soil." A typical menu looks like this:

  • fried baby carrots and purple-stem mustard served with yukishio (powdered sea salt from Miyakojima)
  • green onions and buds of arugula marinated in apricot vinaigrette
  • soup of spring burdock with an essence of red wine
  • the neck meat of Toyo-no-shamo (fighting cock) and cherry tomatoes grilled en brochette

vegetable dish

  • a plate of seasonal vegetables
  • uncured ham of black pork grown on ecofarm, served with a salad of leafy greens
  • steamed vegetables in a flavorful soup of its own liquids
  • baked spinach gnocchi and char-grilled homemade sausages

main dish

  • grill of Toyo-no-shamo (fighting cock)
  • grilled rump of shorthorn beef
  • grilled bone-in roast of black pork grown on ecofarm
  • beer stew of shorthorn beef brisket
  • the shank meat of black pork grown on ecofarm, stewed with tomatoes
